The Last Minute Muffin Experiment

Standard

Have you ever started baking and then run out of a really important ingredient? Like eggs? So when I was down 1 egg, I quickly searched for egg alternatives – thank you internet folks! 1/4 cup of unsweetened applesauce and 1/2 teaspoon of baking powder is 1 egg equivalent. I had no baking powder so I used baking soda -worked just fine for me. It’s always fun to tweak recipes and see if they are actually edible.

I also made a few more changes:
*The carrots and apples were supposed to be shredded but I don’t own a grater so I finely chopped them
*Substituted 1/2 cup brown sugar + 1/2 cup white sugar for 1 1/4 cups white sugar
*Substituted 1 cup of unsweetened applesauce for 1 cup of oil
*Substituted 2 cups of whole wheat flour for 2 cups of all purpose flour
*Bought whole walnuts and chopped myself (they were cheaper in the grocery store)

Morning Glory Muffins – final version
2 cups whole wheat flour
2 eggs
1 1/4 cup unsweetened applesauce
2 1/4 teaspoon baking soda
1/2 cup brown sugar
1/2 cup white sugar
2 teaspoons ground cinnamon
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup sweetened coconut flakes
2 teaspoons vanilla extract
1/2 teaspoon salt
1 Apple chopped (peeled and cored)
2 cup chopped carrots

Cooked for 20 mins at 350 F

Delicious!

Summer Love

Standard

dessert

What happens when you mix strawberry shortcake, a brownie, vanilla frozen yogurt and chocolate syrup? The perfect summer sugar overload! The strawberries were locally grown so they were delicious, but there was no way I could finish this monster by myself. That’s when the fiance comes in to the rescue. Thanks babe!

In general mixing desserts is always a good idea, especially when you use fruit in season from your local farmer’s stand. The fruit is just incredibly fresh and just thinking about this makes me want to go buy some more fruit!

And here is the recipe I used for my strawberry shortcake.

Strawberry Shortcake:

1 basket strawberries sliced
{about} 2-3 tablespoons of sugar (or until bitterness subsides)
1 package of strawberry shortcake shells

Happy Summer!

Lemons to Lemonade

BEFORE

AFTER {lemon juice}

lemonade 2

Some lemons, a few limes, water & sugar. So now I realize that I over did it with the lemon juice, but the smell of the lemons was delicious. We added a lot of water and some sugar to the lemon juice and it turned out pretty tasty. I finally got to put my juicer ( a 50 cent yardsale find)  and my thrifted Pyrex pitcher to good use. I am also super excited for my new plants to sprout! I was inspired by a few posts around the internet to plant some lemons, because the leaves give off a great lemon-y scent. We shall see if they sprout soon. Wish me luck!

This is the recipe we used: http://allrecipes.com/Recipe/Best-Lemonade-Ever/
{My lemon juice amount was higher than it called for and I added limes which made it really sour, so I needed to double the amount of water}

Happy Summer!
