The Last Minute Muffin Experiment


Have you ever started baking and then run out of a really important ingredient? Like eggs? So when I was down 1 egg, I quickly searched for egg alternatives – thank you internet folks! 1/4 cup of unsweetened applesauce and 1/2 teaspoon of baking powder is 1 egg equivalent. I had no baking powder so I used baking soda -worked just fine for me. It’s always fun to tweak recipes and see if they are actually edible.

I also made a few more changes:
*The carrots and apples were supposed to be shredded but I don’t own a grater so I finely chopped them
*Substituted 1/2 cup brown sugar + 1/2 cup white sugar for 1 1/4 cups white sugar
*Substituted 1 cup of unsweetened applesauce for 1 cup of oil
*Substituted 2 cups of whole wheat flour for 2 cups of all purpose flour
*Bought whole walnuts and chopped myself (they were cheaper in the grocery store)

Morning Glory Muffins – final version
2 cups whole wheat flour
2 eggs
1 1/4 cup unsweetened applesauce
2 1/4 teaspoon baking soda
1/2 cup brown sugar
1/2 cup white sugar
2 teaspoons ground cinnamon
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup sweetened coconut flakes
2 teaspoons vanilla extract
1/2 teaspoon salt
1 Apple chopped (peeled and cored)
2 cup chopped carrots

Cooked for 20 mins at 350 F
